5 Simple Appetizers To Bring To A Super Bowl Party

I love Super Bowl parties! The food is a big part of the festivities. I love tasting the different dishes people bring.


This year I am going to make Sausage Puffs. They are easy to make and so delicious to eat. I hope you enjoy them as much as my family does.


Ingredients:


16 oz of ground pork

2 tbls of green chilies

1/4 to 1/2 cup of cheddar cheese

1/4 cup chopped flat-leaf parsley

2 tsp of Worchestershire Sauce

2 pkgs of Puff Pastry

1 egg for egg wash


Instructions:


In a medium-size bowl, combine the first five ingredients. Lay the Puff Pastry on a cutting board and divide into 3 inch squares. Put some of the filling onto the pastry square and moisten the edge with egg wash. Roll the pastry closed and place on a baking tray. Brush with egg mixture and bake in a 425 degree oven for 15 minutes. Remove from oven and cool on a rack.


You can make a dip with orange marmalade.


1 cup of orange marmalade

2 tsp of soy sauce

1 tsp of sriracha

When I think of Super Bowl get togethers, you have to have a great dip and who doesn't love Queso? Gone are the days with Velvetta cheese and salsa. You've got to try this rich and velvety dip and it's made with REAL cheese.


Ingredients


1/2 pound fresh Cheddar cheese - shredded (sharp or medium sharp cheddar)

3/4 cup finely chopped green onions (white parts only) but reserve the green parts for top

1 Tbsp butter

3.5 oz diced tomatoes (Cherry or Roma tomatoes)

2 large cloves of garlic - minced

1/2 tsp cayenne or sriracha seasoning (add more to taste, if desired)

1/2 tsp each: ground cumin and onion powder

13 oz. full fat evaporated milk

1 Tbsp cornstarch

4 oz. fire roasted green chiles or jalepenos

1/4 cup finely chopped fresh cilantro


Instructions

  • Melt butter in a medium-sized pot over medium heat. Saute' the green onions for 4 minutes (white parts only) until soft. Then add the garlic and sauce' about 30 seconds.

  • Add the tomatoes in with juices, chiles, cumin, onion powder and cayenne pepper. Cook while stirring occasionally until soft and fragrant (about 2 minutes).

  • Mix cornstarch into the pot, then pour in the evaporated milk, stirring well to combine.

  • Bring to a boil. Mixing well, add the cheese. Cook, while stirring, until cheese just melts through the milk and transforms into a smooth sauce. Immediately, take off heat.

  • Stir in cilantro, reserved green onions and season with salt to taste, if needed. Mix well and serve warm.


Best served with tortilla chips. Queso will thicken as it cools.


I don't have a team in the Super Bowl this year; however, it's always fun to watch the game, the commercials and the half time performances.

A simple but delicious appetizer that I love to take to gatherings is Caprese salad on a stick. They are super easy to make, easy to serve and healthy. Be sure to make extra because you can't eat just one. I found a pre-made glaze that I drizzle over mine and you can also make your own reduction with balsamic vinegar and olive oil.


Instructions:

  • Thread 1 cherry tomato, 2 mozzarella balls, 2 basil leaves and 1 grape tomato on a wooden or bamboo skewer or toothpick. Repeat to make the remaining skewers.

  • Arrange the skewers on a platter and drizzle with the olive oil, follow by balsamic vinegar. Season generously with salt and pepper and serve. The skewers may be covered and refrigerated for up to 2 hours; serve chilled or at room temperature.

Great friends and great food help ease the pain of your team not participating. It is still fun to gather and celebrate a great season of football. There is always next year!!

Super Bowl Sliders

Ultimate Hot Ham and Cheese Sandwiches

12 servings


Ingredients:


½ C Butter, melted

1 Tbsp Worcestershire sauce

1 Tbsp Minced Onion

1 Tbsp Poppy Seeds

2 Tbsp Olive Oil Mayonnaise

1 pkg of 12 Sweet Hawaiian Rolls

1/2lb Deli Ham, thinly sliced

1/3lb Swiss cheese, thinly sliced


Instructions:


1. Preheat oven to 350 degrees.

2. Mix together the first 4 ingredients in a small bowl to make the sauce and set aside.

3. Slice Hawaiian Rolls in half. Line a 9 x 11 baking sheet with the bottom portion of the buns.

4. Spread a small amount of Olive Oil Mayo on the buns.

5. Add thinly sliced Ham & Cheese and cover with the top half of the bun.


6. Using a small spatula, coat the top and sides of each slider with the prepared sauce.

7. Cover the sliders on the baking sheet with tin foil and bake for 12-14 mins.


Not only are these sliders so easy to make, they just melt in your mouth! It's an easy dinner to put together or to feed a crowd on game day! Be prepared to hand out the recipe for those who will ask!

Keto Friendly Hot Artichoke Dip (from the Best of Bridge cookbook)


This is one of my favorite dips. Who would have thought something this easy could taste this good?


1 14oz can artichoke hearts, drained and chopped

1/2 cup parmesan cheese, freshly grated

1 cup mayonnaise

1/2 tsp of garlic salt

Dash of lemon juice

Mix all ingredients. Heat in a 350 oven for 10 minutes. (Serves 6)


Yep, that’s it! Be sure to use canned artichokes in water and not marinated artichokes in oil. I substituted that once and it came out way too oily. This can be doubled and kept warm in a mini crock pot.


Serve with sturdy crackers or vegetables (if Keto)


This year, I'll be watching for the commercials.
